Whether I’m in the middle of a health reboot, or just feeling a little hangry, I’m always looking for the perfect, healthy snack. Enter Anti-Inflammatory Guac!
Cut up some veggies (in place of tortilla chips) and this makes the perfect snack! My fave guac-scooper is sliced yellow or orange peppers. The crunch makes it just as satisfying as a chip!
Also, between you and me... I don't really measure things. And especially for guac, you can eyeball it! Add more or less tomatoes, you cannot add too much lime (you can always drain it out) and... I love cilantro so I tend to have a heavy hand with that.

Anti-Inflammatory Guacamole
2 large avocados (about 9 ounces each), peeled, pitted, and cut into 3/4 inch pieces 1/2 cup diced red onion 2 medium tomatoes, chopped 5 tablespoons chopped cilantro 1 teaspoon minced jalapeño pepper (adjust to taste) 1 teaspoon fresh lime juice 1/2 teaspoon kosher salt

Step 1: Prep Your Ingredients Start by preparing all your ingredients. Peel and pit the avocados, then cut them into 3/4 inch pieces. Dice the red onion, chop the tomatoes, and measure out your chopped cilantro. If you like more heat, feel free to add extra minced jalapeño pepper.
Step 2: Combine Everything in a Bowl Grab a medium-sized bowl and place all your prepared ingredients into it. That includes your avocado pieces, diced red onion, chopped tomatoes, chopped cilantro, minced jalapeño pepper, fresh lime juice, and kosher salt.
Step 3: Gently Mix Using a spoon, gently mix the ingredients together until they’re well combined but still chunky. Be careful not to mash the avocados too much; we want to keep that wonderful chunky texture.
Step 4: Serve and Enjoy Your Chunky Avocado Salsa is ready to be enjoyed! Serve it with your favorite fresh, raw vegetables, or as a delightful accompaniment to grilled chicken or fish.
